To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (yields 850ml, enough for 10)

150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

Making the Citrus Syrup: Place all the components into a pot, heat until it reaches a simmer, mixing to dissolve. Then, take off the stove and leave to cool fully. Pour into a sterilised bottle, seal and refrigerate it in the fridge, it will last for up to four weeks.

Preparing the Batch Mix: Combine every spirits and syrup into a large bottle, allow it to infuse for an hour, then filter it best through muslin, making it fully clarified.

To serve: Measure 85ml of your cocktail base into a cocktail shaker containing ice, and agitate gently for a minute to cool it down. Pour into an frosted cocktail glass or a similar vessel, decorate with a few cranberries and finish with a brief mist of mandarin oil over the drink.
